Our FIRST NEWSLETTER OF THE YEAR!
We need all the strength and good energy we can conjure up for the final stretch of our expansion, so it was important for us to come together and celebrate one final New Year in our small brewery on Central Ave. We started the year off right by sharing Otoso (top right of the picture), followed by Ayako’s homemade Osechi Ryori, which we paired with our Shizuku Sake.
Can you believe the feast Ayako made? It was so beautiful and we can’t thank her enough for all the time and energy she put into it (okay- Shinobu and Joanie did help by cutting flower carrots and cheering her on while drinking beer, but that’s about it). We hope you all are having a wonderful New Year and we look forward to celebrating together in our new taproom for the next one!
EVAN MADE VEGGIE HAMBAGU ハンバーグ FOR OUR LUNCH
Why are we bragging about our lunch in a sake newsletter you ask? Because it was delicious and should 100% be paired with a bottle of Kimoto. The savory and sweet sauce over the blackened, hand-crafted beyond burger was so rich and comforting and we think you should try out the recipe, pair it with our sake, and let us know what you think! Evan found this recipe from one of his favorite go-to Japanese cooking websites called, “Just One Cookbook” and then adapted it to be vegetarian. There are a lot of really great, approachable recipes on there, so we hope you enjoy it as much as we do!
We don’t have a lot of cooking space at our current location, so you’ll note the fancy lab equipment in the background- we clean and sanitize the area after cooking, but we can’t WAIT to have some more space in our new location. Anyway, here’s a pic of the sauce chemistry:

NEW SAKE ALERT: LIMITED EDITION YUZU NIGORI
Think “refreshing, layered creamsicle” for this sake. We have so many fans of our Yuzu sake, that we wanted to try out a new variety with the same flavor profile, only adding a rich creaminess to the texture. Our friend and sake master, Sam, from Kuraichi was the first person to request this style of sake from us, so we’ve decided to release our first two cases exclusively with him in Industry City. Please let us know what you think, and maybe it will make the regular line-up soon!
We’ll talk a little bit more about Sam and Shinobu’s friendship on our Social Media tomorrow, so follow along to read about all the childhood similarities they’ve uncovered while drinking sake together!
