we’re opening the door

We are so excited to announce that this Saturday (May 1st) we are finally opening our brewery doors to allow customers inside. For now, we’ll remain as a bottleshop (sorry- no taproom service yet!), but at least we’ll get to meet you at the counter. Our entire staff has been vaccinated and we’ll continue taking all the necessary precautions to keep everyone as safe as possible. We look forward to welcoming you in and hope to see you soon!

Are you ready for Tokubetsu #2??

In case you missed Tokubetsu #1, the idea is that we’ve started a limited series where each Tokubetsu batch is unique in flavor and in the way it was made. 

So what’s so special about batch #2 you ask? This sake was fermented with a combination of our #901 yeast and a wild yeast. The wild yeast foamed quite a bit along the way, but was worth the trouble in the end, as it produced a subtly tropical aroma and a bright complexity on the palette. We also gave it a little extra time in the tank, increasing the abv to 17%. 

Our team had a fun night tasting it so that we could describe the flavors and pairing ideas for the label (one of the many difficult tasks of a brewer)… but we want to hear what you think it tastes like!

In other news…

We’re loving this warm weather and have happily swapped our beanies out for new baseball caps and re-stocked our short sleeve t-shirts (+ new colors!!).
