WE’RE GETTING IN THE HOLIDAY SPIRIT <
LET THE GIFT GIVING BEGIN!!
We’ve decided to provide a few options to help meet your various gifting needs this year. Of course, we brought back our “Holiday Nigori” bottles, filled with our classic Nigori and wrapped in a snowy label. And for those extra special occasions, this weekend we’re releasing another limited batch of our “Shizuku” sake. You’ve probably heard us talk about it before, but for a little reminder, Shizuku is our most delicate and smooth sake, made by hanging the Moromi in bags for the liquid to drip, instead of pressing them. The process takes more time and care, only capturing a small amount of sake from each bag, but the result is completely worth it. (If you turn your sound on, you can hear the “divine droplets” dripping.)
Both of those bottles will be available for purchase at the brewery and can also be bought in our gift boxes- packed with the bottle of your choice, two glasses, and a card. Come by this weekend and James will be more than happy to help you out. Cheers and Happy Holidays, everyone!
ONE FOR THE AGES
As our construction crew wraps up the plumbing phase and prepares to pour concrete at the new brewery location on Troutman, we decided to leave a little something special for our future selves or whoever else may brake the ground down the line. Our time capsule is just a moment to capture the goals and spirit of our team, full of little trinkets and photos and letters… and, of course, a can of spam.
A note from Shinobu:
While we’d love to continue admiring our beautiful new trench drain and underground pipes, it’s time to pour concrete and seal the production floor. On this floor, we’ll make hundreds of batches of good sake for the years to come. On this floor, we’ll wash rice like playing in a kiddie pool (because we’ll have the trench drain!) and clean tanks like super-soaker combat (because…) You may stand on it when you come for a tour or you might dance on it at the occasional party. This floor will be the foundation of our new brewery.
To remember our humble start, we decided to bury a small time capsule in the floor. We don’t know when or if we'll take it out, but we’re hoping that by then we’ll have built something that we’re proud of.
(And as curious brewers, we are running a long-term SPAM fermentation experiment.)
STAFF LUNCH APPRECIATION POST
In between washing rice for the build, filtering, bottling, building our new location and just generally brewing/running a small business, we find time to make lunch together throughout the week. Sometimes one of us will cook something at home and bring it in, sometimes one of us will cover the brewing while another person is cutting veggies for curry in the back…. and of course sometimes we just have to grab a quick hot plate from the deli. We’re lucky that everyone on our team enjoys cooking and exploring new flavors and recipes. Here are a few photos of our favorite recent meals :)
