Summer is in full swing

SO We’re getting ready for construction!

While all the final steps are being taken before construction can officially begin, we’re doing our own preparation of the new space (in between the hours spent running our current brewery of course).

Power washing, removing old screws and hooks, taking apart shelving units, etc. Actually, right now I’m sitting in a folding camping chair writing this newsletter as Shinobu is vacuuming the joists behind me- an activity he’s deemed as a new form of daily exercise.

We’ll keep you updated with progress on the new space (and Shinobu’s muscle building) all summer long!


PLEASE WELCOME SHIZUKU TO THE LINEUP

If you’ve had our Anniversary bottle, you know just how beautifully smooth sake can be when you step back and allow gravity to do its job. We realized that asking you to wait for the opportunity to try it once a year was simply not enough, so we’ve decided to release our Shizuku as a semi-regular, limited release series. If you’re not familiar, Shizuku is a premium craft sake style, made by hanging bags of Moromi (the fermented mash) and allowing the sake to drip from the bags instead of applying pressure (think Drip coffee vs. French press). With notes of white tea, honeydew, Persian cucumber and water chestnuts, we think it’s the perfect bottle for very special occasions and hope that you’ll enjoy. Here’s a peak into the process:


WE’re back at the farmers market!

We love getting to be a part of the craft community in Bushwick, and one of our favorite parts of the summer is meeting you by the park on Saturday mornings, next to some awesome local small businesses and farmers at the Maria Hernandez Farmers Market. We’ve been lucky enough to set up next to Starlight Pizza again this year and most weeks you’ll get to see James’ smiling face running our booth.
