AT LONG LAST… WE’RE OPEN!!

We’re beyond thrilled to finally open our doors and welcome you in to drink some sake with us. If you’ve followed our journey, you know how much we’ve been looking forward to this moment. While we’re still in the process of getting our production up-and-running in the new space and moving the final pieces out from our central home, we decided to soft open our new taproom, but don’t worry, we’ll have some big opening parties in the near future. For now, we’re featuring a few of our classic sake styles rotating on draft, and continuing our typical bottle sales in our new location on Troutman.

A NOTE FROM SHINOBU:

As James posted on social media a few days ago (and received 700+ likes!), we just got the license for our new facility at Troutman on Monday. The taproom is open now and we hope to have an opportunity to serve you sake very soon. 

It was February 2020 when I got my first license for the original brewery at Central. After a painful 8 months of waiting, I got so excited and took this picture near the lawyer’s office. I was not sure where this adventure would lead, but I was quite happy to start something small by myself.

A lot of things have happened since then and now we have another license. I am happier this time because it is not only me who got excited about the license. We now have a handful of passionate craft sake believers who decided to join our team. And the picture doesn’t even include all the cool bartenders you’ll meet at the taproom. All of us are very excited that finally we can make more sake.  

And I believe it is not only our team. We received many wishes (did I say 700 likes?) and some flowers. One of my regrets for the past three years is that we were not able to serve you a glass of sake at the brewery. I started brewing because I wanted to have something good to share at our home party. What’s more fun than hosting your friends with handmade sake?  

So, when you are in the neighborhood, please come by our new space and be our guest. It’ll be our utmost pleasure to welcome you with freshly made local sake. It’s not fully up and running yet so we’d like to ask you to be a little patient with us, but we promise it won’t take three years this time.
