WE'RE TURNING 2!

WHAT A YEAR.

We’re growing up so quickly (especially with the expansion project under way) that it’s hard to believe 2 years have passed already. We’re honored to still be here and a part of this community so we hope that you’ll come celebrate with us on our birthday- in person this time!

On Friday, April 1st, we’ll be at the brewery starting from 1pm selling our specialty Anniversary t-shirts and bottles (we sold out quickly last year, so make sure to come by early if you want a bottle!), then at 7pm, we’ll meet down the street at Mika to party. There will be a raffle and some fun panel discussions, followed by a big toast- plus they carry our sake and many other delicious beverages at the bar. See you then!


WE DID IT AGAIN!

Say hello to our Second Anniversary bottle, another beautifully delicate Shizuku Sake しずく酒. In case you didn’t grab a bottle last year, this is a traditional pressing method where we capture the finest drops from the mash by patiently allowing gravity alone to do the work. (Think pour-over drip coffee compared to a french press method.)

Here are our team’s tasting notes to give you an idea of what it’s like, but we can’t wait to hear what you think…

Tastes like: White tea, honeydew, Persian cucumber, water chestnuts

Pairs with: Almond croissant, melon with prosciutto, cured salmon

Sounds like: A serenade of rain

TEAM BONDING BOTTLING

This year, the whole team gathered together to label and wax dip the bottles. Shinobu made us a delicious hot pot and we had so much fun working and hanging outside afterwards. Here’s a peak into the day:
