Love is in the Air…

And we’ll have our Bubbly Nigori back just in time for Valentine’s day.

With notes of white pepper and tapioca wrapped up in a subtle creamy carbonation, we think it’s the perfect toast to love! We’ll also have gift box sets available at the brewery starting this weekend, which include a bottle, two glasses, and a cute card. ♥

some updates on the expansion!

Hi there,

First of all, thank you very much for your support so far. We have raised $184K from over 150 awesome investors. We have 39 more days to reach our $250K goal and we're confident that we can make it. If you are still "watching", now is the time to join us to build this together.

Today I wanted to provide you with some updates on the project. We've been working with the architecture firm, Kushner Studios, who is well known in NYC's craft brewery industry. The same reputation goes to our engineering firm, ABS Engineering, who is designing everything on the technical side. While our priority is to build the production space and start making more sake as soon as possible, we're also working with our brand designers, Michelle and Ryan, to develop the taproom concept.

On the other side of things, Joanie and I have been working on the process design to increase the production capacity with new equipment. We built our current brewery operation with the scalability in mind, so our overall process stays the same and we'll continue making one batch of sake per week. It'll be just bigger. And washing 600 pounds of rice efficiently requires some thinking. We'd like to have many of these problems solved now, instead of waiting for an "ohhh sh*t" moment at the first batch.

So, while appreciating beer cans and eating Van Leeuwen ice cream, these are the things we're working on. Please stay warm and have a great week!

our EMPLOYEE lunches are so good now

I mean, we cook rice for sake here every day, why not also cook rice for us to eat? After a quick trip to Japan Village in Industry City, we gathered all the nori and furikake we could need to get started. Now we take turns bringing in different curry, stews, onigiri fillings, etc. and then share! Here’s a peak into our favorite lunch so far… a tuna rice bowl with homemade pickles and beyond meat + oinarisan. Yum!
